Quick Notes: There isn’t much that’s better than jalapeno poppers, so I’m always pleased to create any variation of that snack food. This JalapeƱo Popper Stuffed Chicken has all the right flavors to scratch that itch.
Ingredients
- 3-4 Chicken Breasts
- 4 Pieces of cooked, sliced/crumbled bacon
- 1 block of cream cheese, softened
- 1/4 cup shredded cheese (cheddar, montery jack or pepper jack would be ideal here)
- 2 jalapenos
- 2 cups panko breadcrumbs
- 3 tablespoons oil
Instructions
- Remove the seeds from your jalapenos and dice them. Mix them in a bowl with the cream cheese, bacon, and shredded cheese.Ā Put the mixture in the freezer for a few minutes to set up.Ā We don't need it to be super firm, but we want to try to prevent melting the filling out of our chicken while we're cooking it.Ā
- Preheat your oven to 350.Ā
- Butterfly your chicken breasts and pound them out a little bit if they feel super thick.Ā A majority of the cooking is going to be done on the stovetop, so we don't want to burn the outside before the inside of our chicken is cooked.Ā
- Once your filling has set up, stuff all of your filling into your chicken.Ā Feel free to use some toothpicks to close up the edges if you want but it's not necessary.Ā
- Mix the breadcrumbs with a little bit of salt and pepper (to taste), and put them on a plate.
- Roll the outside of your delicious stuffed chicken goodness in the breadcrumbs until the outside is coated, and set them on a plate.
- In a large skillet, warm your oil over medium-high heat. Add your chicken to the skillet and cover.Ā Cook for five minutes on each side.Ā
- If your chicken is done now, fucking steller.Ā If not....put it in the preheated oven for another 5-10 minutes.Ā I prefer to use an oven-safe skillet so that I can just plop it in the oven if necessary to finish the dish.Ā The baking time is going to vary based on the size of your chicken breasts, so don't feel shy about cutting into one a little bit to see where you're at.Ā
- Allow the chicken to cool for five minutes and serve.Ā Ā
