Quick Notes: This recipe and photo were contributed by Erika Bruner. Although Strawberry Super Chocolate Cookies is posted by my user name, I cannot claim any credit for either one.
Ingredients
- 3/4 cup butter, softened
- 3/4 cup light brown sugar, packed
- 1/4 cup white sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 packet instant chocolate pudding mix (not sugar-free and not ‘cook & serve’)
- 1/4 cup unsweetened natural cocoa powder
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup semi-sweet mini chocolate chips (you can use regular for extra gooeyness)
- 5 ounces chopped dried strawberries
Instructions
- In a large mixing bowl, cream both sugars and butter together.
- Mix in all remaining ingredients except strawberries and chocolate chips.
- With a wooden spoon, stir in chocolate and strawberries. Stir until fully incorporated.
- Scoop and round balls (about 16) and place on cookie sheets. Slightly flatten with a whiskey glass.
- Refrigerate for 2 hours.
- Preheat oven to 350° and bake refrigerated cookies for about 10-12 minutes.
- Cool on wire rack.
