Quick Links: I know, there isn’t really a “recipe” to a seafood boil. Fair point, but if you’ve never made one then you gotta know where to start. I recommend right here, with this spicy Cajun seafood boil which is really fuckin’ bomb. Full disclosure: I”m not Cajun. I’ve never even been to the south and I’m not going to pretend this is any sort of authentic prep method – it’s just how I do it and the seasoning I use is literally called “cajun seasoning.” I’m including crab, but it’s totally fine to just stick with shrimp. Crab gets pricey and I almost never make it, so I get it.
Ingredients
- 4 snow crab clusters (if you can, if not just stick to the shrimp)
- 1 lb shrimp, peeled and de-veined
- 5 andouille sausage, cut int bite-sized pieces
- 4 or 5 cobs of corn, cut into fourths
- 6 baby red potatoes, cut into fourths
- 1/2 cup butter (or so)
- 2 tablespoons cajun seasoning (I have some I bought at the store, but here's a recipe for a good mix https://www.gimmesomeoven.com/cajun-seasoning/)
- 1 shit load of garlic
- 1 fuck ton of old bay seasoning
- salt and pepper
Instructions
- Put a big ol' stockpot on the stove full of water. Bing it to a boil over high heat. Toss in a few minced cloves of garlic (measure with your heart), a tablespoon of cajun seasoning, salt, and throw in your corn and potatoes. Boil for five minutes.
- Remove the corn and set it aside. Allow the potatoes to boil alone for another five minutes.Â
- Toss in the shrimp and the crab. Allow these to boil until cooked (about 13-15 minutes). If you're only using shrimp, just give it like 8-10.
- Drain the water from your pot preferably without losing your garlic, and return the pot to the burner. Reduce heat to medium-high.Â
- Throw about a half a stick of butter in the pan, a little more minced garlic, and your sausage. Season the ever-loving fuck out of this thing with Old Bay and the remaining tablespoon of Cajun seasoning. Cook together almost like a stir-fry. We're just trying to get the seasoning good and incorporated. Once everything is melted and delicious, turn off the heat and allow everything to cool slightly.
- Meanwhile, in a small sauce-pan over medium heat, melt your remaining butter with some garlic and old bay. Let it simmer together gently for about five minutes.Â
- You're done! Serve on a plate with a dish of the garlic butter.
