Quick Notes: This is a great party food, appetizer or even just because. The recipe calls for cherry or grape tomatoes, but you could totally use normal garden tomatoes if you have them. The flavors will still be perfect for this easy classic bruschetta.
Ingredients
- 2 cups diced cherry or grape tomatoes
- about 8 large basil leaves, sliced
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1/4 cup shredded parmesan
- 1 french baguette, sliced and lightly toasted (do this in the oven, not the toaster)
- dash of salt
- optional: 1/4 cup balsamic reduction for topping (I cover how to make that here: http://www.justthefuckingrecipe.net/stuffed-chicken-caprese/)
Instructions
- Mix everything together in a bowl (except the reduction and bread obviously) and let it chill in the fridge for four hours prior to serving.Â
- Top the slices of toasted baguette with bruschetta and drizzle with the reduction to plate.Â
- If you're serving this at BBQ or potluck style event, you could definitely just leave the bread in a bowl and the bruschetta in a bowl and set em down side by side.
