Quick Notes: I love bibimbap. It really is just a pain-in-the-ass stir fry, but it’s pretty and delicious. You could switch up the meat and veg if you like. It also saves really well.
Ingredients
- 1 lb shaved steak
- 2 cups cooked rice
- 2 cucumbers, julienned
- 2 carrots, peeled and julienned
- about 2-3 cups chopped greens. I wanted bok choy, but they didn't have it so I just used romaine. Cabbage could also work.
- 4 poached eggs (you could definitely just get away with frying them if you can't poach)
- gochujang sauce for topping ((https://drivemehungry.com/gochujang-sauce/)
- sesame seeds for topping
- a few tablespoons of vegetable oil
- Marinade:
- 1 cups lite soy
- 1/4 cup rice vinegar
- 2 tablespoons honey
- 1 tablespoon gochujang paste
- 2 cloves garlic, minced
- dash crushed red pepper
Instructions
- Combine marinade ingredients in a bowl, and pour over your meat. Cover and let refrigerate for 1-2 hours.Â
- Bring a couple of tablespoons of oil to temperature in a large frying pan over medium-high heat. I actually use two pans because I'm so fucking impatient, but you could use one. We have to fry everything separately, so you decide what you're comfortable with.Â
- Fill your bowls with rice.Â
- Stir fry your cucumbers and carrots separately, but for about 2-3 minutes each. Lay them on top of the rice in separate areas. Â
- Stir fry your green just long enough that they wilt slightly. 1-2 minutes. Add to each of the dishes.
- Stir fry your meat until cooked. Discard the marinade. Add to the dish.
- Add your poached eggs on top. Since we're doing four (or less, if you're feeding fewer people) there are some good hacks out there for oven tin poached eggs. I actually put them in ramekins and lower them each slowly into a pot of almost boiling water using tongs. You decide what's best for you. Make sure you drain off any water before adding it to your dish.Â

- top with sesame seeds and enjoy!
