Quick Notes: This chicken was inspired by this old Shake n Bake type stuff you used to find in the refrigerated section. I used to use it all the time for quick dinners before I learned how to actually cook. It was delicious. They don’t sell it anymore, so I figured it couldn’t be that hard to replicate. It’s still just as easy. The prep time on this cheddar bacon baked chicken is practically non-existent, and it was super delicious.
Ingredients
- 4 chicken breasts
- 2 eggs (or sub some milk)
- 1 1/2 cup panko bread crumbs
- 1/2 cup grated cheddar
- 1/4 cup real bacon bits (or bac'n bits if you're avoiding pork)
- salt and pepper
Instructions
- Preheat the oven to 350.
- In a shallow dish, whisk your eggs. All we're doing with this is making all the crunchy deliciousness stick.Â
- In a shallow dish or on a plate, mix together the good shit (i.e. remaining ingredients)
- Dip each piece of chicken into the egg mixture, then through the bread crumb mixture then plop that bitch on a lined baking sheet. I like to try to pat on a little extra if the bread crumb mix so it sticks well.Â
- Bake in the oven for 30 minutes. You're done!
This would be amazing with a side of our Garlic Butter Green Beans.
