A tasty sweet produce rich muffin that will also curb your craving for a sweet baked treat, these Chocolate Raspberry Zucchini Muffins rock! These are a donation by Erika Bruner, the accompanying recipe and photo are hers. The recipe should be super easy and super tasty as well.
Ingredients
- 2 1/2 c flour (I use self-rising. If not, add 1 1/2 tsp baking soda)
- 1 cup of sugar
- 1/4 cup cocoa powder (unsweetened)
- 3/4 cup soft butter
- 2 eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 2 cup shredded zucchini
- 1 1/2 cup fresh raspberries
- 1 cup chocolate chips
Instructions
- Preheat oven to 350.
- Throw flour, sugar, and cocoa powder into a bowl and mix well.
- Add all the rest of the ingredients one at a time. Make sure one is completely incorporated before adding the next.
- Spoon into muffin tin 3/4 full.
- Bake for 20 minutes for small muffins and 25-28 for large.
