Quick Notes: Look, man. This is super simple. You can make this any way you like, with whatever pasta and whatever veg, but I think this Classic Buttered Noodles with Mushrooms and Parmesan is a perfect quick weeknight dinner and it’s super fucking delicious. It doesn’t reheat well so don’t make ahead or make more than you and your family can eat in a sitting.
Ingredients
- 16 oz Pappardelle Pasta prepared to package specifications
- 1 stick of butter
- 1 cup freshly grated parmesan plus more for topping
- 2 cloves of garlic, minced
- 2 cups chopped white button mushrooms
- 1 teaspoon dried parsley
- flaky sea salt and freshly ground pepper to taste (table is fine if you don't keep this shit on hand)
Instructions
- In a large deep skillet melt your butter over medium heat. Â
- Once melted, add your shrooms and garlic. Salt and pepper them. Â
- Saute these together for about 3-5 minutes, but avoid overdoing it. You do want your mushrooms to soften but remain mostly firm.Â
- Toss your pasta in the melty mushroom goodness and add the parmesan and Italian seasoning. Toss the pasta around with tongs or a pasta spoon until the noodles are fully coated.Â
This would be super amazing with a fresh and light Berry Crunch Salad with Poppy Seed Dressing beforehand!
