Quick Notes: These Cucumber Salmon bites are an awesome cross between a cucumber sandwich and sushi without any of the obnoxious carbs. I don’t personally care about carbs, but I have a ton of friends on a Keto kick and wanted to help with some STHNACKS!
Ingredients
- 2 cucumbers
- 1 package cream cheese, softened
- about 8 oz sliced smoked salmon
- 1 oz fresh baby dill
- everything but the bagel seasoning (this is a Trader Joe's seasoning, but you get usually get off-brand "everything bagel" seasoning at most stores)
Instructions
- Take a vegetable peeler and go down the sides of your cucumbers leaving strips of peel in-between.
- slice the cucumbers into quarter-inch slices.
-  Take a spoon and scoop out about a tablespoon of cream cheese. and put it atop the slice. Do this with all your slices and put them on the serving tray.
-  Aggressively sprinkle everything but the bagel seasoning over the tops of the cream cheese. Like, super aggressively. That shit is delicious.
- use your fingers to break off little bits of salmon and place them on top of each cucumber.
- Do the exact same thing with the dill.
- Serve.Â
