Quick Notes: There’s a ton of awesome, labor-intensive recipes for Chicken Tortilla Soup out there. I like this one for a quick easy meal. You literally just dump everything in the pot and leave it. You could easily Crock-Pot it, too.
Ingredients
- 2 large chicken breasts, cooked and shredded
- 1 large can red enchilada sauce
- 2 cans black beans
- 1 can corn
- 1 can stewed tomatoes
- 1 small can diced green chilies
- 1 yellow onion, diced
- 2 tsp cumin
- 1 tsp onion powder
- 1 tsp ground chipotle pepper
Instructions
- Just dump all that shit in a pot and cook over medium high heat until onions are clear. BOOM. Soup.
Make this just the first course and follow it up with some Pork Chile Verde.
