Quick Notes: Traditionally, a Cali style burrito would include Carne Asada, but that’s hours of fucking work for the first meal of the day so I went with bacon. If you’re a beast before coffee, here’s my recipe for Carne Asada that would go amazingly in this Grilled California Breakfast Burrito.
Ingredients
- 6 HUGE ASS tortillas (you can get these at your local Mexican Market)
- 12 eggs
- a few tablespoons of butter
- 1 lb bacon
- 2-3 cups grated cheddar
- Pico (6 roma tomatoes, garlic, 1/2 red onion, 1 jalapeno, cilantro) http://www.justthefuckingrecipe.net/easy-pico-de-gallo/
- 4 avacados
Instructions
- Well ahead of time, make your Easy Pico de Gallo and set aside in the fridge. A couple of hours is ideal.
- Preheat the oven to 425 F.
- Lay all your bacon on a lined cookie sheet (with edges). Bake for 17-20 minutes.
- Crack all your eggs into a bowl and whisk them together, salt and pepper to taste).
- In a large deep frying pan over medium heat, melt your butter. Slow cook your eggs and scramble them. Scrambled eggs are supposed to be a little creamy. Please do not cook every single bit of moisture out of your eggs for fuck sake. Bleh.Â
- Once your eggs are done, set aside.
- When the bacon is done, remove it from the oven and set it in a paper towel to drain excess grease. Once they are cool enough to handle, roughly chop it.Â
- Set a large frying pan on a burner on medium-high heat. Allow it to come to temperature.Â
- On a large plate or clean countertop, layout your tortilla. On the bottom, start with a handful of cheese, followed by eggs, bacon, pico, and sliced avocado. Roll it tightly together.Â
- Place the burrito seam down on the frying pan and cook until the underside is a light golden brown. Flip it, and do the same on the other sideÂ
- Repeat with each burrito, serve with a side of Country Fried Potatoes!
