Quick Notes: I’m stating breasts here because that’s what I used, but honestly… whatever chicken parts you prefer would probably be fine for these Instant Pot Chicken Gyros. Also, you can really toss whatever you want on here! You could also oven roast these instead of using an instant pot or pressure cooker by using the fluids as a marinade.
Ingredients
- 1 package pita bread (usually about six pieces)
- 2 chicken breasts
- 3/4 cup white vinegar
- 1/4 cup lemon juice
- 1 tablespoon minced garlic
- Salt and Pepper
- Tomato, sliced
- Cucumber, sliced
- Red onion, sliced
- Feta Cheese, crumbled

Instructions
- Put your chicken breasts into the Instant Pot. Pour over the fluids, top with garlic.Â
- Salt the chicken and then pepper the ever-loving fuck out of it. Preferably fresh ground pepper if you have it. Even lemon pepper would be awesome.
- Close the lid, set to sealing and manual cook for 8 minutes. If it's frozen, allow another 8-minute natural release.
- Remove the chicken, and slice thinly.Â
- Layer the chicken in the pita bread, cover with sliced tomatoes, cucumber, onion and several generous spoonfuls of Classic Greek Tzatziki Sauce and feta.Â

Good luck! The pita bread was a bit challenging to locate during the apocalypse, but everything else was pretty easy to find.
