Quick Notes: This is a meat that can really go in tacos, burritos, nachos, whatever. It’s a flavorful chicken that packs a bit of a punch. Instant Pot Chicken Verde Tostadas are a fun alternative to a boring taco night, for sure. No Instant Pot? Add the same shit and do it on the stovetop. It might take a bit longer, but it will still be delicious.
Ingredients
- 6-8 chicken tenderloins
- 1/2 cup salsa verde
- 1/2 cup chicken stock
- 1 diced jalapeno
- 1 clove of garlic, minced
- 1 can diced green chiles
- salt and pepper to taste
- For Topping:
- Black beans
- Cilantro
- Diced red onions
- Diced tomatoes
- Cotija Cheese
- Avacado
- Sour Cream
Instructions
- To your instant pot, add everything but the ingredients that specify they are "for topping." Close the lid, set to seal and manual cook for 8 minutes.Â
- Instant release (unless you added your chicken frozen, then give it an 8 minute natural release).
- Remove the chicken to a separate bowl and shred with a kitchenaid, electric mixer, or forks if you're a noob.
- Add the chicken back to the pot and allow it to sit in the juices for about ten minutes.Â
- When removing your meat to build your tostadas, use tongs or it'll make your tostada shell soggy. Top with whatever you like and enjoy!
