I also owe thanks to Savory Tooth where she originally found the idea. The original recipe is health-conscious and low carb… but it’s the apocalypse and I’m fat and sassy, so fuck that shit. I made some changes to make this Instant Pot Pork Tenderloin with Honey Mustard Sauce. and a little bit of sweetness. Ingredients
- 1.5 lb pork tenderloin
- I onion, sliced
- 1 tablespoon minced garlic
- 1/4 cup brown sugar
- 2 tablespoon olive oil
- 1 cup water plus 2 more tablespoons for the sauce
- salt and pepper
- 1/2 cup honey
- 1/2 cup mustard
Instructions
- Chop the pork loin in half. Turn on the saute mode on your instant pot and warm the oil.Â
- Toss in the onions, and garlic and saute for 2-3 minutes. Â
- Salt and pepper all sides of your pork loin extremely well. Add it to the pot and sear on all sides.Â
- Add the cup of water, close the pot, and the vent and manual cook for 15 minutes. When done, give it a 10-minute natural release.Â
- Meanwhile, mix together your honey, mustard, and two tablespoons of HOT HOT water. It doesn't need to be center-of-the-sun hot, but definitely as hot as you can get it out of the sink.Â
- Once your loin is done, remove it to a cutting board and slice it into 1/2 inch thick pieces.Â
- Serve drizzled with the honey mustard.Â
