Quick Notes: I love sheet pan dinners. They’re usually relatively healthy dinners and this Roasted Italian Chicken Sheet Pan Dinner is no exception. It’s also fucking stupid easy. This is written as a recipe for two but you could easily double it for a family meal.
Ingredients
- 1 large or 2 small chicken breasts
- 1 lb. fresh green beans, prepared (ends removed, strings removed)
- 1 large or 2 small zucchini (seeds removed if it's large, and cut into bite sized pieces)
- 2 cloves garlic, minced
- 1-2 tablespoons Italian seasoning (literally what it's called)
- 1-2 teaspoons chili powder
- 2 tablespoons olive oil
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat oven to 350 degrees.
- Cover a cookie sheet with foil or parchment.Â
- On one side, toss your bacon with about half of your garlic. Dob with little bits of butter. This should only take up about a third of the sheet.Â
- In a medium sized bowl, toss your zucchini in one tablespoon of olive oil and season with salt, pepper, Italian seasoning, and chili powder. Once it's spread evenly, dump this on the other half of the pan.Â
- If you're making one chicken breast into two, half it (hamburger style). Take your two pieces of chicken and rub them with olive oil. Season both sides of it the same way you did the zucchini and top with your remaining minced garlic. Put your two pieces of chicken in the middle of your cookie sheet.Â
- Bake uncovered for 25-30 minutes or until chicken is cooked through.Â
