Quick Notes: This Sausage Stuffed Shells recipe does include a recipe for sauce. If you’re looking for a simple weeknight meal you could easily sub that out for something store bought.
Ingredients
- 1 lb jumbo shells, cooked to package specifications
- 1 lb spicy sausage roll (like jimmy dean ground sausage)
- 12 oz ricotta
- 1 cup shredded parmesan (more for topping)
- 28 oz can crushed tomatoes (give or take)
- 1 green bell pepper, roughly chopped, seeds removed
- 2 (or 4 or 6, whatevs) cloves of garlic, minced and divided
- 1/2 white onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon crushed red pepper flakes
Instructions
- In a large sauce-pot heat your olive oil over medium-high heat.Â
- Add your green peppers, onion, 1/2 of your garlic (reserve the other half for stuffing your shells), and red pepper flakes and saute until onions are clear.Â
- Stir in your tomatoes, salt to taste, cover, and reduce heat to medium. Simmer for about 20 minutes stirring frequently.
- Meanwhile, brown your sausage in a frying pan. Drain off the grease. Set aside.Â
- Preheat your oven to 350 degrees.
- In a medium-sized mixing bowl, combine your ricotta and your parmesan. Stir in your browned sausage along with your reserved garlic. Salt and pepper lightly.Â
- Set out a 9 x 13 baking dish. Stuff your shells liberally one by one with the sausage and cheese mixture. Stuff as many of these bitches in the pan that you can.Â
- Once your sauce seems....like a sauce, taste it. If it needs more salt, now is the time to add it.Â
- Pour your sauce over your shells. cover the dish with ton foil and bake in your preheated oven for 30 minutes.Â
- remove the dish from the oven and allow it to cool about ten minutes before serving. Top with parm!'
Make it a meal by starting with some Chicken and Gnocchi Soup and follow it with some Crème Brûlée.
