I have several great chili recipes on this website. Chili is kinda my thing. I love making it, I love sharing it. I love chili cook-offs. This Classic Slow Cooker Chili with Creamy Chive Topping is an everyday chili. It’s delicious and normal enough that everyone will love it. You can also make it Vegetarian, which I do often, by subbing out the meat for Morningstar crumbles (or your favorite brand). If you like chicken, try this Instant Pot White Bean Chicken Chili, and if you want something to knock your guest’s socks off, try this Slow Cooker Sweet Pork Chili.
Ingredients
- 1 lb morning star crumbles or browned ground beef
- 2 cans of chili beans
- 2 cans of black beans
- 2 cans corn
- 1 zucchini, chopped
- 1 onion, diced and separated
- 2 tablespoons chili powder
- 1 tablespoon smoked paprika (normal is fine)
- 1/2 tablespoon cumin
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon ground chipotle pepper
- --Creamy Chive Topping
- 1 bunch of chives, minced and separated
- 8 oz Neufchatel cheese (or cream cheese is fine)
- 1/2 cup sour cream
- 1/4 cup whole milk
- 1 tablespoon dried parsley flakes
Instructions
- Chop the onion, immediately set aside about 2 tablespoons of the onion, and mince it, super small. Retain the larger portion for the chili itself.
- Soften your Neufchatel or Cream cheese in the microwave.
- Combine your softened cheese with your cream cheese and milk. Stir until it's all perfectly mooshed.
- Stir in your minced onions, about 80 percent of your minced chives, and your parsley.
- Add a dash of salt to your mixture, and stir it well. Cover and refrigerate until you're ready to eat.
- Put literally every-fucking-thing else in the ingredients list aside from your reserved chives in a crockpot. Don't drain the beans or the corn, just toss it in there. Add a can of water. Stir it all together and cook on low for 4 hours or high for 6.
- Once it is done, top it with the Creamy Chive topping, some grated cheese, and maybe some cilantro if that's your jam. I also like to use scoopy chips with my chili. That's just me.
Serve alongside some Cornbread and Honey Butter or follow it up with some delicious Desserts
