Quick Notes: This Slow Cooker Sweet Pork Chili is the only recipe I have that I’m fiercely protective over. I’ve gone back and forth about even adding it to this site, but it is genuinely the recipe I’m asked for most by anyone that knows me and I think the world should have it cuz it’s bomb. But…. if you try to claim this as your own I will beat you with a shovel. A vague disclaimer is nobody’s friend. This carry’s quite a bit of heat, so if you can’t handle that….
Ingredients
- 1 1/2 lb pork tenderloin
- 2 cans of corn
- 2 cans of black beans
- 2 14 oz cans diced tomatoes
- 1 can great northern beans
- 2 jalapeno peppers, diced
- 2 anaheim peppers, diced
- 1 white onion, chopped
- 4 cups root beer, divided
- 1 cup water
- 4 cups brown sugar, divided
- 2 cups red enchilada sauce (I have a recipe here, but store-bought is fine: http://www.justthefuckingrecipe.net/restaurant-style-cheese-enchiladas/}
- 3 tablespoon chili powder
- 1 tablespoon either crushed ghost pepper or crushed red pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons ground cinnamon
- 1 teaspoon chipotle chili powder
- Salt
- Suggested Toppings: Sour Cream, cheese, chopped cilantro
Instructions
- In a large Tupperware or a gallon freezer bag, add your raw pork, a cup of root beer, and 1/4 cup brown sugar. Seal it up and let it sit in the refrigerator overnight. If you absolutely don't have the time for that, you can make do with four hours.Â
- Add your sweet pork to your slow cooker. Discard your marinade, but you don't need to worry about any of the sugar or anything that comes with it because we're about to add a fuck ton more.Â
- Pour in another cup of root beer, a cup of brown sugar, a cup of water, and all your seasonings. Cover and let it slow cook on low for about 6 hours (3 on high).
- Remove your pork and shred it. Do it with a mixer if you have one and save some time and headache. Plop it back in with all the juices. Add your enchilada sauce and another cup of brown sugar. Cook another 2 hours on low, or an additional one hour on high.Â
- Dump literally everything else in the pot. Don't rinse the beans or the corn. The seeds from the peppers can go in or not. Doesn't really matter.Â
- Slow cook together for another 2 hours. Taste. If it needs more of any seasonings for you, adjust accordingly.Â
