Quick Notes: Full disclosure: I’m neither southern nor Bacon. This just seemed like the best title. Southern Bacon Gravy Brunch Pizza is one of two brunch pizzas I’ve created, but really it’s just an awesome way to feed a crowd with breakfast food. Like any pizza, you can pretty much top it with whatever the hell you want. Feel free to measure with your heart, but remember toppings affect baking time.
Ingredients
- 1 Boboli Pizza crust (you can use whatever kind of crust you want, really. Make your own if you're like... fuckin' Papa John or whatever, but your baking time may vary from mine.)
- 4 slices thick-cut bacon (get the goddamn bacon from the butcher. So much better than the crap in the packaging)
- 1/2 green pepper, diced
- 1/4 red onion, diced
- 1 egg, scrambled
- as much grated cheese as your heart desires
- 1/4 cup flour
- 1 cup milk
- salt and pepper
Instructions
- Preheat oven to 450.
- Chop bacon prior to cooking (just to make this easier)
- In a large deep skillet over medium-high heat, cook the bacon to your desired done-ness. Keep in mind this is going back in the oven, so don't fry it to a fucking crisp, K?
- Pull out the bacon with a slotted spoon and set aside on a paper towel-lined plate to drain.
- Turn the heat down to medium and let your grease cool slightly or it's going to get real mad about this next step.
- Add the flour to the grease, and stir to make a roux. If it doesn't feel like you have enough grease to flour ratio you can add just a little butter. Also, if that's the case.... you bought shitty bacon. Make better choices.
- Slowly whisk in milk. It should begin to thicken into a gravy. Remove from heat and allow to cool and thicken.
- Layout your crust, either on a baking sheet - or it can go right on the rack if you like it a little on the crisp side.
- Layer gravy on the pizza, leaving some crust.
- Top with as much shredded cheese as you like. I like a generous layer on this pizza, but you can play it coy. I happen to like a "Mexican" or "nacho' blend for most breakfast items, but whatever you like is cool.
- Cover with the remaining toppings and put in the oven.
- Bake for 15 minutes. Check it, and if the toppings aren't done to your liking, give it another 5.
- Let stand 10 minutes before cutting.
