Quick Notes: For some reason, Tortellini in Garlic Cream Sauce is everyone’s favorite recipe of mine. Any time someone is coming over to eat, they request this recipe. It’s exceedingly simple, and the sauce resembles an Alfredo, but not quite as thick. I use frozen tort for ease and speed, but you could use fresh if you choose.
Ingredients
- 2 19 oz bags frozen tortellini
- 2 large heads of broccoli, chopped into bite-sized pieces
- 3 cloves of garlic, minced
- 1 1/2 cup heavy whipping cream
- 1/3 cup shredded parmesan (plus more for topping)
- 2 tablespoons butter
- salt and pepper
Instructions
- In a large pot, bring a whole lot of water to boil. We're putting both bags of tort in here along with the broccoli, so..... use your judgement with the amount of water. Salt the fuck out of the water as well.Â
- In a small saucepan over medium heat, melt the butter. Once melted, add your minced garlic to it, and saute it for about 2-3 minutes.Â
- Add your heavy whipping cream to the saucepan. Whisk it well, and leave it to come to temperature. You can turn it up slightly if you want, but don't leave it to sit unattended.Â
- Once your water begins to boil, add your tort and broccoli to the pot. Since we're using frozen tortellini it shouldn't take very long. All we're really doing is bringing it to temperature. It's already cooked. This should take less than five minutes, but check your packaging instructions. If you're using anything else, you might want to cook your broccoli separately or add it in a little later.Â
- Back to our sauce, once the cream has started to boil, whisk in your cheese just a little bit at a time. It's going to want to stick and melt to the bottom. Prevent that from happening. Your sauce should begin to thicken slightly. Continue whisking until the cheese is fully melted. salt and pepper the sauce, and remove it from the burner. It will thicken some as it cools.Â
- Drain all the water off your pasta and broccoli and return it to the pan. Pour over your sauce, and give it a good stir so that all the tortellini is coated. Let it sit for a good five minutes off any heat.
- After the pasta has been allowed to sit, give it another good stir so that any sauce that has sunken to the bottom and cooled is now coating the pasta.Â
- Sprinkly with parm and serve!
